DAY 18 – MAY 31st 2022 Gatlinburg, Tennessee

The day started with us waking up to roosters crowing.

Today, I baked a sugar free cake using monk fruit. Often monk fruit is mixed with erythritol to make it suitable for baking and as a sugar substitute. An interesting fact is that monk fruit is a 1000 x sweeter than sugar. With zero calories you need only a pinch to be equivalent to one teaspoon of sugar. The package that I use contains a total of 15 grams and is $48.00 on Amazon.

We did a lovely hike in the town of Cosby with trails that lead us through the Great Smoky Mountains. Did you know that this is where most convicts who escaped hid? Sometimes they were never found and often times it could take as long as 10 years before they were apprehended.

We asked someone we met to recommend places to eat. She insisted we try the Bubba Gump Shrimp Company. It is a large chain started in California with Forrest Gump paraphernalia. Since I am vegetarian, and we are not really into deep fried American Food. We ended-up skipping it and instead went to a local Mexican restaurant.

In the evening we went for a bike ride around the campground and watched Americans build a fire. We cannot sit by a fire on such a hot evening. Many Canadians need a cool 5 or 6 degrees outdoors before a fire makes sense.

I didn’t have a lot of work left to do today so we retired early to get a head start on our bike ride tomorrow. Once, a file is “Broker Complete” it is in the hands of the lawyer and the lender. My job is technically done! Now it is all up to the other parties to figure-out all the legal paperwork! I am looking forward to tomorrow. Every Wednesday the loop trail is closed to traffic so that people can bike!
